Methode Ancestrale, said to pre-date Champagne, is a style of fizz that has the wine bottled during the first fermentation with plenty of residual sugar. The wine then continues to ferment to produce the carbon dioxide and then left to rest for 28 months. There is no dosage added at disgorgement.
Made from organic Chenion Blanc grapes with is a dry, saline and chalky sparkler with a fine mousse.
