Carefully selected grapes with high sugar content are feremnted while constantly being mixed to extract colour and tannins from the berries. The Ripasso method then has the wine passed over the grape skins left from the production to increase alcohol, body and aroma. Some of this wine is then aged in cask to give a dry and full flavoured wine with red fruit notes and spicy touches.
