Organic Nero d’Avola grapes are fermented in open barrels and hand pieage gently extracts colour and flavour. The Frappato grapes are fermented in clay amphora which encourages a rolling fermentation which makes generous and fruit driven wines. The resulting blend is rich, opulent and stern, like red wine used to be.
